Le Brun Dominique The youngest in a family of 4 children, Dominique Le Brun directs his studies to take over the family business. So, after a HNC "Transformation Distribution of agricultural and food products" followed in Nantes he started in the company with the objective of developing the tool, expertise and the brand Le Brun. Today aged 47, his ambitions have not changed. Our know-how Orchard: - Owner grower. - 120 hectares of orchards. - Control of yields from year to year. - Fruit quality control. From apple to the juice: HACCP - The apples are hand picked in order to prevent any damage and select the best fruits (3 time in order to have fruit at the same maturity). - We always keep the collected apples in special wooden cases for about 3 weeks in order to enable the fruit to slightly dehydrate and therefore concentrate its aromas. - Sort of apples. - Washing. - Milling. - Maceration of the pulp (limits the astringent side of the product). - Pressing (yield: about 600 l / tonne of apples). Natural fermentation: - Apple pure juice vatting. - Filling to eliminate residues. - The apple juice is then stored in a thermo regulated fermentation tank (<8 C). - Long fermentation (3 to 4 months). - The foam process is totally natural. It is carried out in closed environment to enable the fermentation generated carbonic gas to dissolve in the cider. - Filtration (removal of fermentation agents) - No pasteurization. - Bottling. From apple to the juice: at least 6 months
